PHO Bo Kho (Beef stew with rice noodle) is a spicy and flavorful Vietnamese beef stew that makes for a pretty epic bowl of noodle soup when you’ve maybe had your fill of pho or are looking for something a little different.

And, indeed, Pho Bo Kho is flavored with chili, five-spice, fish sauce, plenty of garlic, lemongrass, and tomato. Its familiar red color comes from the addition of fragrant annatto, which add a distinctive red color!

Pho Bo Kho is considered as Beef Stew

Pho Bo Kho at its most basic is considered a ‘beef stew’. It can be prepared as a soup or a thicker stew. Also served with rice or French bread, You can use rice noodles (“rice sticks” if you’re familiar with Vietnamese restaurant parlance) or egg noodles, too, if that’s your preference!

In the northern Vietnam it is eaten for breakfast, and the origin of the stew lies also there. In central Vietnam Pho Bo kho is served as a noodle, and in South Vietnam fresh bread is dipped in the sauce. These three ways make this dish eaten for breakfast, lunch or as a main course, Served with rice or French bread.

Bo Kho derive from French Pot au feu Stew

Pho Bo kho is just like the national dish of Vietnam Pho, derived from the French pot-au-feu stew. Because of the apparent similarity to the French variant. Bo kho was probably the first step in the evolution of Pho. Some French ingredients are replaced by Chinese, as rice wine instead of red wine. And the addition of five spice powder.

Serve with French bread (Banh mi bo kho), rice noodles (Hu tieu bo kho of Pho bo kho) or white rice.
